When should a trade business stop using spreadsheets?

The usual signs are practical rather than philosophical: more than one person needs the same information at the same time, you have lost or forgotten a quote in the last month, you are not certain which invoices are unpaid without checking the bank, or you spend an evening a week on admin that produces nothing. Any one of those means the spreadsheet is now costing more than it saves.

Can I keep using Excel alongside Pipeline?

Yes, and plenty of people do for specific jobs - a complicated estimating workbook, or a report an accountant wants in a particular shape.
